Classic Earl Grey Cookies

These Earl Grey cookies are buttery, fragrant and simple enough for a weekend bake. Finely ground Classic Earl Grey brings black tea depth and a clean bergamot finish.

Ingredients

  • 1 tablespoon Classic Earl Grey, finely ground
  • 125 g unsalted butter, softened
  • 1/2 cup caster sugar
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 1 1/4 cups plain flour
  • Pinch of salt

Method

  1. Cream butter and sugar until pale.
  2. Mix in egg yolk and vanilla.
  3. Stir in flour, salt and finely ground Earl Grey.
  4. Shape into a log, chill for 30 minutes, then slice.
  5. Bake at 170°C for 10-12 minutes, until lightly golden at the edges.
