Classic Earl Grey Cookies

These Earl Grey cookies are buttery, fragrant and simple enough for a weekend bake. Finely ground Classic Earl Grey brings black tea depth and a clean bergamot finish.
Ingredients
- 1 tablespoon Classic Earl Grey, finely ground
- 125 g unsalted butter, softened
- 1/2 cup caster sugar
- 1 egg yolk
- 1 teaspoon vanilla
- 1 1/4 cups plain flour
- Pinch of salt
Method
- Cream butter and sugar until pale.
- Mix in egg yolk and vanilla.
- Stir in flour, salt and finely ground Earl Grey.
- Shape into a log, chill for 30 minutes, then slice.
- Bake at 170°C for 10-12 minutes, until lightly golden at the edges.
